Healthy Marshmallow

I am a new beekeeper and my first package of bees are coming this weekend. My wife and I looked for a suitable marshmallow to plug the queen's cage. All the commercially available marshmallows had ingredients that we were not happy with. So we made our own healthy marshmallows in the kitchen.

2 tablespoons of gelatin powder
1/2 cup of water
1/2 teaspoon of vanillia
1/2 cup of honey

Mix together 1/4 cup of water and gelatin. Whisk and let sit.
Mix the other 1/4 cup of water with honey and bring mixture to a boil.
Slowly pour honey/water into gelatin/water while mixing at medium speed.
Then mix at high speed for 10-15 minutes.
Add vanillia during last 2 minutes of mixing.
Pour into container lined with parchment paper.
Let sit overnight.

Tastes great! Don't forget to leave some for the queen!
