Cooking with Honey

When cooking with honey, remember these useful tips:

  1. Store honey at room temperature. Refrigeration will speed the crystallization process.
  2. One 12-ounce jar of honey equals one standard measuring cup. For easy removal from a cup, lightly coat the container with vegetable oil or spray, then pour in the honey.
  3. Honey is sweeter than sugar, so you can use less. However, because of honey’s moisture content, when substituting honey for sugar in baked goods, reduce the amount of liquid in the recipe by 1/4 cup for each cup of honey, add 1/2 tsp of baking soda for each cup of honey and reduce the oven temperature by 25 degrees to prevent over-browning.
  4. Honey should not be fed to infants less than 1 year old.
